Notes
The pumpkin was grown by Planted. The Market Farm in a sink hole.
ingredients:
- 8 tbsp unsalted butter (1 slick)
- 1 1/4 Cup of Sugar
- 3 Large Egss
- 1 Cup pumpkin puree
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 3/4 cup Self Rising Flour
- 1/3 cup of Milk
- 1 cup chocolate chips
- 1 cup chopped Walnuts
Instructions
- Preheat the oven to 350 degrees.
- Spray a baking pan with cooking spray and line it with parchment paper.
- Slice the pumpkin horizontally and place it skin side up in the baking dish.
- Cook for 1 hour and 30 minutes or until the pumpkin is tender.
- Allow it to cool, then scrape the pumpkin flesh from the skin. Add the flesh to a mixer and puree.
- Pour the pumpkin puree into a strainer to drain excess water.
- In a large mixing bowl, whisk together butter, sugar, eggs, pumpkin puree, and vanilla extract.
- Stir in the pumpkin pie spice.
- Mix in half of the flour, then the milk, and then the remaining flour.
- Fold the chocolate chips and walnuts into the batter.
- Scoop the batter into individual muffin cups.
- Bake for 55-60 minutes.
- Allow to cool, then place on a serving dish and enjoy.
