Taken stright from Grandmas recipe book. This delicious casserole is a perfect treat for anyone who loves eggplant or is a csserole fan. 

This recipe is dedicated to Grandma.

Love you Grandma 

ingredients:
  • 1 Medium Eggplant, peeled and sliced
  • 1 egg beaten
  • Flour
  • 1 lb ground beef
  • 1 Bell Pepper, chopped
  • 1 onion, chopped
  • 2 cans of tomato sauce
  • 1 block of mozzarella cheese, sliced
  • grated chedder cheese
  • oregano
  • Salt
  • Pepper
  • Italian Seasoning
  • 1 casserole dish
Instructions
  • Mix salt and pepper with some flour for the eggplant slices.
  • Dip the eggplant slices in a bowl with milk and 1 beaten egg.
  • Heat a frying pan on medium and fry the eggplant until golden brown. Set aside.
  • Add ground beef and italian seasoning to a large skillet. Add onions and bell peppers, cooking until the ground beef is well done.
  • Add salt, pepper, and 2 cans of tomato sauce.
  • Grease the casserole pan.
  • Build the casserole by alternating layers of eggplant, ground beef mixture, sliced mozzarella, and grated cheese.
  • Repeat until you run out of eggplant slices.
  • Sprinkle grated cheese on top once the casserole is complete.
  • Bake at 350°F until the casserole is golden brown.
