Perfect for those summer night cookouts, add these delicious carrots to any meal. Substitute the carrots for sweet potatoes for a delicious twist on this classic recipe.
ingredients:
- 2 pounds of carrots
- 4 tbsp of butter
- 4 cloves of garlic, minced
- 1 tsp of italian seasoning
- 1/4 tsp of salt
- 1/4 tsp of Black Pepper
- 1/3 cup of grated parmesan cheese
- 1/4 cup fresh chopped parsley
Instructions
- Preheat oven to 425 degrees
- Grease a baking sheet with cooking spray or line the pan with foil
- Place prepared carrots in a large mixing bowl
- Melt the butter and add minced garlic, Italian seasoning, salt and pepper
- Pour the butter mixture over the carrots and toss. Add parmesan cheese and mix thoroughly.
- Transfer carrots to the baking sheet
- Bake for 20-25 minutes or until tender and crispy
- Remove it from the oven and allow it to cool. Taste test the carrots and add seasoning accordingly.
- Sprinkle fresh parsley over the carrots and serve.
