Perfect for those summer night cookouts, add these delicious carrots to any meal. Substitute the carrots for sweet potatoes for a delicious twist on this classic recipe. 

ingredients:
  • 2 pounds of carrots
  • 4 tbsp of butter
  • 4 cloves of garlic, minced
  • 1 tsp of italian seasoning
  • 1/4 tsp of salt
  • 1/4 tsp of Black Pepper
  • 1/3 cup of grated parmesan cheese
  • 1/4 cup fresh chopped parsley
Instructions
  • Preheat oven to 425 degrees
  • Grease a baking sheet with cooking spray or line the pan with foil
  • Place prepared carrots in a large mixing bowl
  • Melt the butter and add minced garlic, Italian seasoning, salt and pepper
  • Pour the butter mixture over the carrots and toss. Add parmesan cheese and mix thoroughly.
  • Transfer carrots to the baking sheet
  • Bake for 20-25 minutes or until tender and crispy
  • Remove it from the oven and allow it to cool. Taste test the carrots and add seasoning accordingly.
  • Sprinkle fresh parsley over the carrots and serve.
